Le challenge d’avril 2010 des Daring Bakers nous était proposé par Esther de The Lilac Kitchen. Il s’agissait de confectionner un pudding traditionnel en utilisant, si possible, du suet (graisse de rognon de bœuf, si j’ai bien tout suivi). J’ai utilisé, à la place, du saindoux que j’ai déjà eu bien du mal à trouver ! »
The April 2010 Daring Bakers’ challenge was hosted by Esther of The Lilac Kitchen. She challenged everyone to make a traditional British pudding using, if possible, a very traditional British ingredient: suet. I used lard instead, lard being quite difficult to find already!
Des ingrédients tout d’abord :
- 1/2 cup de farine
- 1/4 teaspon de sel
- 1,5 teaspoon de levure chimique
- 1/2 cup de chapelure
- 1/3 cup de sucre glace
- 1/3 cup de saindoux
- 1 œuf
- 6 à 8 tablespoons de lait
- de la rhubarbe et du chocolat, puisque je fais un pudding à la rhubarbe et au chocolat.
First, some ingredients:
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1.5 tsp baking powder
- 1/2 cup breadcrumbs
- 1/3 cup caster sugar
- 1/3 cup lard
- 1 large egg
- 6-8 tbsp cold milk
- rhubarb and chocolate, since I made a rhubarb and chocolate pudding.
Tout est mélangé : la farine
Everything is mixed together: flour

then we add milk

et ça fait de la pâte à pudding.

Il faut aussi éplucher la rhubarbe pour retirer les morceaux trop fibreux

et la découper en morceaux.

et à fermer celui-ci avec du papier d’alu. J’ai alors placé le moule dans le panier vapeur de ma cocotte minute (fermée avec un couvercle standard, pas sous pression) et mis tout ça à cuire à la vapeur pour deux heures et demie. C’est là que c’est un peu compliqué : il faut vérifier de temps en temps qu’il reste de l’eau, ce qui implique de la manutention dudit panier au-dessus d’une source d’eau bouillante et de vapeur… c’est un peu délicat ! Mais on finit par s’en sortir.

Then I put the pan into the steamer basket of my pressure cooker (that I closed with a standard lid, not with the pressure lid) and put everything to steam for two and a half hour. It’s a bit complicated: I needed to check from time to time that there was still water, and that implies to manipulate said basket over boiling water and steam… a bit delicate! But it still gets done.
Au bout de 2 heures et demie, le pudding est cuit. Je l’ai démoulé immédiatement, ce qui a peut-être été une erreur : il s’est énormément étalé ! Je pense que refroidi il aurait mieux gardé sa forme.
After two and a half hours, the pudding is cooked. I unmolded it rapidly, which may have been a mistake: it spread all over the plate! I think it may have kept a nicer shape once cooled down.
Par contre, c’était chuper bon. Si j’arrive un jour à bricoler un machin qui marche mieux pour faire de la cuisson à la vapeur, c’est clairement une recette à refaire… et à faire varier à beaucoup de variables. J’aime bien le fait que ça peut pas vraiment cramer, et que finalement le plus long dans cette histoire, c’était d’éplucher la rhubarbe ! (Et la cuisson, mais ça c’est du temps masqué). It was however really good. If I ever get some more practical method to steam stuff, this is clearly a recipe I could make again—with a lot of variations. I like the fact that it cannot really burn, and that the longest thing in this was to peel the rhubarb! (And steaming, but that’s a background task. Thanks Esther!
I love rhubarb! I’ve never made a true steamed pudding though, the whole steaming business looks a little tricky. How did it taste?

It tasted fantastic. Very moist and delicious.
You do have a double boiler though (or whatever it’s called), I’d go with a heat resistant pan inside of this…
